Salsa

Homemade salsa is a must in our house.  My mom started making her own a few years ago, but it was different every time.  She was finally able to nail down an exact recipe, and it is perfection! The great thing about making your own salsa is that you can cater it to your own tastes--love cilantro?  Add more!  Prefer a more onion-y flavor?  Chop up more!  As for me?  I like it just like this!

Salsa:

1 clove garlic, sliced
1 inch piece of red onion
handful of cilantro, stems discarded
2 (14.5 oz) cans petite diced tomatoes, drained
1 (14.5 oz) can diced tomatoes with green chiles, drained
1 tsp cumin
1 Tbs lime juice
salt and pepper to taste

Pulse garlic and onion in food processor.  Add cilantro and pulse a few more times.  Add tomatoes and blend to desired consistency (I like mine semi-smooth with small chunks.  If you like chunkier, only puree one can of plain tomatoes, and add the other later).  Transfer to a large bowl with a lid.  Add remaining ingredients to taste.  Refrigerate a few hours before serving.
