Guacamole

Every time we get to the produce department at the grocery store, my three-year-old daughter immediately  begins asking and looking for avocados.  We get funny looks and laughs from people around us.  The thing is, she has loved guacamole ever since she was a baby.  She even saw an avocado at my mom's house when she was probably just two, and started asking for "chocomole".  It's definitely a favorite in our house, and I think when you see how easy it is, it will be a favorite for you too!

Guacamole:

2 avocados
1/2 cup salsa
1/2 tsp cumin
1 Tbs lime juice
salt and pepper to taste



Open ripe avocado by slicing lengthwise around the pit.  Scoop out the flesh and place in medium bowl.  Smash the avocado roughly with a fork, then stir in salsa until incorporated and at desired consistency.  Stir in remaining ingredients and taste.  Adjust seasoning accordingly if needed.  Best if made right before serving, or about half an hour before serving and stored in the refrigerator with plastic wrap directly on the dip if you want it cold.

Yield: approx 2 cups
