Chocolate Chip Pancakes with Orange Zest


I know this picture just looks like regular pancakes.  That's because I was too busy enjoying them to take a picture of what they looked like on the inside.  Chocolate and orange are a great combination, and a great way to change up same old pancakes.  I guess you will just have to make them yourself to see all that yummy chocolatey, orangey goodness on the inside!

Chocolate Chip Pancakes with Orange Zest

1 large egg
1 cup all-purpose flour (or half with whole wheat)
3/4 cup milk (I always use skim)
1 Tbs sugar
2 Tbs vegetable oil
3 tsp baking powder
1/4 tsp salt
1/4 cup chocolate chips (I like semi sweet) or 1 oz chopped chocolate
1 Tbs freshly grated orange zest

Crack egg into a mixing bowl with a spout.  Whisk until foamy and doubled in volume.  Add remaining ingredients except chocolate and zest, and whisk together just until combined. Some small lumps may remain. Fold in chocolate and zest.  Let rest 5 minutes while griddle preheats.
Preheat griddle to 325*F.  Pour batter into 4-inch circles.  Flip when the edges look dry and the underside is golden.  Cook until golden on remaining side. 

Serve with powdered sugar.

Yield: 9 4-inch pancakes
